Not the prettiest color in the world, but this cake has some of the best flavors.
The pears are smooth in texture and juicy in flavor with the warm spice of cinnamon and the kick of ginger this sweet cake is perfect after a fall meal. The walnuts add wonderful crunch and smooth flavor that goes well with the pear. One of my favorite recipes, this cake aims to please.
2 1/4 c. all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1 1/2 c. granulated sugar
3/4 c. oil
1 tsp vanilla
2 c. ripe pears (about 2 small), peeled, cored and diced
3/4 c. walnuts, coarsely chopped
2 Tbsp minced fresh ginger
2 c. powdered sugar
1 tsp cinnamon milk
-Preheat oven to 350 degrees and prepare a bundt pan
-In medium bowl, combine flour, baking soda, salt, cinnamon, nutmeg, ginger and whisk to combine thoroughly, set aside.
-In bowl of stand mixer, combine oil and sugar and beat to combine thoroughly.
-Add egg and yolk and beat to combine thoroughly.
-Beat in vanilla.
-Turn mixer to low and add flour mixture, a little at a time, beating until just combined.
-Stir in pears, ginger and walnuts.
-Scrape batter into prepared bundt pan and spread evenly.
-Place pan into oven and bake until toothpick inserted into center comes out clean, about 60 minutes.
-Meanwhile, combine powdered sugar and cinnamon in bowl.
-Add milk, 1 tsp at a time until desired consistency.
-Pour over top of cake and let sit before serving.
